Ingredients
- 1 pound shrimp, peeled and deveined
- 2 cups vegetables (bell peppers, zucchini, corn)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- Lemon wedges for serving
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Cut large pieces of aluminum foil and place shrimp and vegetables in the center of each.
- Drizzle with olive oil and sprinkle with garlic, paprika, salt, and pepper.
- Fold the foil to create packets, sealing them tightly.
- Place the foil packets on a baking sheet and bake for about 15-20 minutes, or until the shrimp are cooked through and the vegetables are tender.
- Carefully open the packets, being cautious of steam.
- Serve with lemon wedges and garnish with parsley.
