Description

Delicious cilantro lime shrimp tacos featuring marinated shrimp, creamy slaw, and ripe avocado, perfect for a quick and satisfying meal.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Corn or flour tortillas
  • 1 cup cabbage, shredded
  • 1 avocado, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice (for slaw)
  • Salt and pepper to taste (for slaw)


Instructions

  1. In a bowl, combine olive oil, lime juice, cilantro, garlic powder, cumin, salt, and pepper. Add shrimp and marinate for at least 15 minutes.
  2. Heat a skillet over medium-high heat and cook the shrimp until they are pink and opaque, about 2-3 minutes per side.
  3. In another bowl, mix together shredded cabbage, mayonnaise, lime juice, salt, and pepper to make the slaw.
  4. Warm the tortillas in a skillet or microwave.
  5. Assemble the tacos by placing shrimp, slaw, and avocado slices in each tortilla. Serve and enjoy!

Notes

For a spicier kick, consider adding cayenne pepper or jalapeños. Use a cast-iron skillet for even cooking.
