Description

Delightful tartlets filled with spicy chorizo, creamy goat cheese, and sweet cherry tomatoes, perfect for any occasion.


Ingredients

  • 1 pâte brisée ready to use or homemade
  • 150 g chorizo, finely sliced
  • 100 g fresh goat cheese, crumbled
  • 200 g cherry tomatoes, halved
  • 2 whole eggs
  • 200 ml thick crème fraîche
  • 1 tablespoon Dijon mustard
  • 1 tablespoon extra virgin olive oil
  • Fine salt and freshly ground black pepper
  • Optional: Fresh basil leaves for decoration


Instructions

  1. Preheat your oven to 180°C (thermostat 6).
  2. Cut the pâte brisée into circles that fit your tartlet molds.
  3. Press the dough into the molds, ensuring it is evenly distributed and that the edges are properly shaped.
  4. Use a fork to poke holes in the bottom of each tartlet shell.
  5. In a mixing bowl, whisk together the eggs, crème fraîche, Dijon mustard, olive oil, salt, and pepper until well combined.
  6. Distribute the chorizo slices and halved cherry tomatoes evenly across the tartlet shells.
  7. Pour the egg and crème mixture over the top of the chorizo and tomatoes.
  8. Sprinkle the crumbled goat cheese uniformly across the tartlets.
  9. Bake in your preheated oven for 20 to 25 minutes, or until the tops turn golden brown.
  10. Allow the tartlets to cool slightly before carefully removing them from the molds.
  11. Garnish with fresh basil leaves if desired.
  12. Serve the tartlets warm or chilled as you prefer.

Use high-quality chorizo for better flavor and consider adding fresh herbs like thyme or oregano for extra depth.
