Ingredients
- 1 pâte brisée ready to use or homemade
- 150 g chorizo, finely sliced
- 100 g fresh goat cheese, crumbled
- 200 g cherry tomatoes, halved
- 2 whole eggs
- 200 ml thick crème fraîche
- 1 tablespoon Dijon mustard
- 1 tablespoon extra virgin olive oil
- Fine salt and freshly ground black pepper
- Optional: Fresh basil leaves for decoration
Instructions
- Preheat your oven to 180°C (thermostat 6).
- Cut the pâte brisée into circles that fit your tartlet molds.
- Press the dough into the molds, ensuring it is evenly distributed and that the edges are properly shaped.
- Use a fork to poke holes in the bottom of each tartlet shell.
- In a mixing bowl, whisk together the eggs, crème fraîche, Dijon mustard, olive oil, salt, and pepper until well combined.
- Distribute the chorizo slices and halved cherry tomatoes evenly across the tartlet shells.
- Pour the egg and crème mixture over the top of the chorizo and tomatoes.
- Sprinkle the crumbled goat cheese uniformly across the tartlets.
- Bake in your preheated oven for 20 to 25 minutes, or until the tops turn golden brown.
- Allow the tartlets to cool slightly before carefully removing them from the molds.
- Garnish with fresh basil leaves if desired.
- Serve the tartlets warm or chilled as you prefer.
