Description

Crispy, golden coconut shrimp with a delightful crunch and tropical flavor that transports you to summer evenings by the ocean.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1/2 cup sweetened condensed milk
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Oil for frying


Instructions

  1. Mix together sweetened condensed milk, mayonnaise, lime juice, salt, and pepper in a bowl for the dipping sauce and set aside.
  2. Prepare three bowls: one with flour, another with beaten eggs, and a third with a mixture of shredded coconut and panko breadcrumbs.
  3. Dip each shrimp in flour, then egg, and finally coat with the coconut-panko mixture.
  4. Heat oil in a deep frying pan over medium heat.
  5. Add shrimp in batches to the oil and fry for 2-3 minutes on each side until golden brown.
  6. Drain shrimp on paper towels and serve warm with dipping sauce.

Notes

For extra flavor, add a pinch of cayenne pepper to the coconut-panko mixture. Ensure frying temperature is medium to avoid greasy shrimp.
