A simple yet flavorful Chilean sea bass recipe that highlights the fish’s rich, buttery flavor with a combination of spices and fresh herbs.
Ingredients
- 1 ½ pounds Chilean sea bass (4 filets)
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ¼ teaspoon ground black pepper
- 1 teaspoon kosher salt
- 3 tablespoons olive oil
- 1 tablespoon salted butter
- 1 garlic clove, minced
- 1 tablespoon finely chopped fresh thyme or parsley, plus more for serving
- 1 tablespoon lemon juice
- Lemon wedges for serving
Instructions
- Heat a large skillet over medium-high heat.
- Pat the Chilean sea bass filets dry with paper towels.
- Mix garlic powder, paprika, kosher salt, and black pepper in a small bowl. Season both sides of each filet.
- Add olive oil to the hot skillet.
- Sear the sea bass filets undisturbed for 4 to 5 minutes.
- Flip the filets, add butter, minced garlic, and chopped herbs. Baste the fish for an additional 2 to 3 minutes.
- Drizzle lemon juice over the cooked filets, and let rest for 1 to 2 minutes.
- Garnish with herbs and serve with fresh lemon wedges.
Notes
For best results, avoid overcrowding the skillet and allow the fish to sear without moving it.
