Description

A simple yet flavorful Chilean sea bass recipe that highlights the fish’s rich, buttery flavor with a combination of spices and fresh herbs.


Ingredients

  • 1 ½ pounds Chilean sea bass (4 filets)
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • 3 tablespoons olive oil
  • 1 tablespoon salted butter
  • 1 garlic clove, minced
  • 1 tablespoon finely chopped fresh thyme or parsley, plus more for serving
  • 1 tablespoon lemon juice
  • Lemon wedges for serving


Instructions

  1. Heat a large skillet over medium-high heat.
  2. Pat the Chilean sea bass filets dry with paper towels.
  3. Mix garlic powder, paprika, kosher salt, and black pepper in a small bowl. Season both sides of each filet.
  4. Add olive oil to the hot skillet.
  5. Sear the sea bass filets undisturbed for 4 to 5 minutes.
  6. Flip the filets, add butter, minced garlic, and chopped herbs. Baste the fish for an additional 2 to 3 minutes.
  7. Drizzle lemon juice over the cooked filets, and let rest for 1 to 2 minutes.
  8. Garnish with herbs and serve with fresh lemon wedges.

Notes

For best results, avoid overcrowding the skillet and allow the fish to sear without moving it.
