Delicious and crispy Chicken Tempura Rolls filled with fresh ingredients that create a delightful contrast. Perfect for a special dining experience at home.
Ingredients
- 2 cups sushi rice
- 2 ¼ cups water
- ¼ cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 400g chicken breast, cut into strips
- ½ cup flour
- ½ cup cornstarch
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 cup ice water
- Vegetable oil for frying
- 4-6 sheets of nori
- Optional fillings: sliced avocado, cucumber strips, julienned carrots, lettuce, mayonnaise, Sriracha, soy sauce, unagi sauce (eel sauce), sesame seeds (for garnish)
Instructions
- Rinse the sushi rice in cold water until it runs clear.
- Cook the rice according to your method.
- Whisk rice vinegar, sugar, and salt in a small bowl.
- Once cooked, let rice rest, and then mix in the vinegar mixture.
- Prepare chicken by cutting it into strips.
- Make tempura batter with flour, cornstarch, baking powder, salt, pepper, and ice water.
- Heat oil in a pot to 175 °C (350 °F).
- Dip chicken strips in batter and fry until golden brown.
- Prepare a bamboo sushi mat with plastic wrap.
- Place nori on the mat and cover with sushi rice.
- Flip nori, layer with tempura chicken and fillings.
- Roll tightly, seal edge, and slice into pieces.
- Serve with sauces and garnish.
