Description

A comforting and hearty soup that combines ground beef, potatoes, and creamy cheese for a delightful family meal.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing for about 3-4 minutes until softened.
  2. Add the ground beef to the pot. Cook until browned, and then drain any excess grease.
  3. Stir in the diced potatoes and chicken broth. Bring this mixture to a boil, then reduce the heat and simmer for 15-20 minutes until the potatoes are tender.
  4. Add milk and heavy cream into the pot, stirring to combine everything thoroughly.
  5. Gradually add the shredded cheddar cheese. Stir until it melts beautifully into the soup.
  6. Season with salt and pepper according to your taste, then let it simmer for an additional 5-10 minutes.
  7. Serve the soup hot, garnished with extra cheese or green onions if desired.

Notes

For variation, consider adding different vegetables or spices to enhance flavor.
