- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing for about 3-4 minutes until softened.
- Add the ground beef to the pot. Cook until browned, and then drain any excess grease.
- Stir in the diced potatoes and chicken broth. Bring this mixture to a boil, then reduce the heat and simmer for 15-20 minutes until the potatoes are tender.
- Add milk and heavy cream into the pot, stirring to combine everything thoroughly.
