Delicious cheese, spinach, and mushroom quesadillas, perfect for quick meals and family gatherings.
Ingredients
- 2 cups fresh spinach, chopped
- 1 cup sliced mushrooms
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large flour tortillas
- 1/2 cup softened cream cheese
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Cooking spray or additional olive oil for cooking
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until tender, about 3-4 minutes. Stir in the fresh spinach and cook until it wilts.
- In a bowl, blend softened cream cheese with garlic powder, onion powder, salt, and pepper.
- Spread the cream cheese mixture evenly over one side of each tortilla. Layer the sautéed spinach and mushrooms followed by a generous sprinkle of shredded cheese.
- Fold each tortilla in half and place on a lined baking sheet.
- Spray or brush the tops of the tortillas with cooking spray or olive oil.
- Bake for 15-20 minutes, until golden and crispy.
- Slice into triangles and serve hot.
Notes
For extra crispy quesadillas, consider pan-searing them in a skillet before baking.
