Description

Delicious cheese, spinach, and mushroom quesadillas, perfect for quick meals and family gatherings.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup sliced mushrooms
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 large flour tortillas
  • 1/2 cup softened cream cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray or additional olive oil for cooking


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until tender, about 3-4 minutes. Stir in the fresh spinach and cook until it wilts.
  3. In a bowl, blend softened cream cheese with garlic powder, onion powder, salt, and pepper.
  4. Spread the cream cheese mixture evenly over one side of each tortilla. Layer the sautéed spinach and mushrooms followed by a generous sprinkle of shredded cheese.
  5. Fold each tortilla in half and place on a lined baking sheet.
  6. Spray or brush the tops of the tortillas with cooking spray or olive oil.
  7. Bake for 15-20 minutes, until golden and crispy.
  8. Slice into triangles and serve hot.

Notes

For extra crispy quesadillas, consider pan-searing them in a skillet before baking.
