Ingredients
- 2 cups cooked seafood mix (shrimp, crab, and scallops)
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup heavy cream
- 1 cup chicken or seafood broth
- 1/2 cup diced onion
- 1/4 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon Old Bay seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 package (8.5 oz) Cheddar Bay Biscuit mix
- 1/2 cup shredded cheddar cheese
- 1/2 cup water
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes, until they turn translucent.
- Sprinkle in the flour, garlic powder, Old Bay seasoning, salt, and black pepper. Cook the mixture, stirring frequently, for 1-2 minutes until it bubbles.
- Gradually whisk in the heavy cream and broth. Continue stirring until the mixture thickens, about 3-5 minutes.
- Add the cooked seafood mix and frozen mixed vegetables, stirring gently to combine the ingredients. Once mixed, remove the skillet from heat and pour the mixture into your chosen baking dish.
- Prepare the Cheddar Bay Biscuit mix according to the package instructions. Add the shredded cheddar cheese and water, mixing until just combined.
- Drop spoonfuls of the biscuit dough over the seafood mixture, ensuring coverage as evenly as possible.
- Bake the dish in the preheated oven for 20-25 minutes or until the biscuits rise and turn golden brown.
- Allow the pot pie to cool for about 5 minutes before serving.
