Description

A comforting seafood pot pie topped with flaky Cheddar Bay biscuits, marrying rich flavors with simple preparation.


Ingredients

  • 1 cup cooked seafood (shrimp, crab, or lobster)
  • 1 cup heavy cream
  • 1 cup chicken or seafood broth
  • 1/2 cup chopped onions
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • Salt and pepper to taste
  • 1 package of Cheddar Bay biscuit mix
  • 1 cup shredded cheddar cheese
  • Butter for brushing


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Melt butter in a large pot over medium heat, sauté onions, carrots, and celery until softened (about 5 minutes).
  3. Add garlic and cook for an additional minute.
  4. Pour in heavy cream and broth, stirring to combine.
  5. Add seafood, thyme, parsley, salt, and pepper. Allow to simmer for 5-7 minutes.
  6. Pour the seafood mixture into a baking dish.
  7. Prepare the Cheddar Bay biscuit batter according to package instructions and fold in shredded cheese.
  8. Drop spoonfuls of biscuit batter over the seafood mixture.
  9. Brush the biscuits with melted butter.
  10. Bake in the preheated oven for 25-30 minutes or until the biscuits are golden and cooked through.

Notes
