Description

A delicious recipe for cauliflower tacos featuring roasted florets topped with a refreshing cilantro lime crema.


Ingredients

  • 1 head of cauliflower, chopped into florets
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Corn or flour tortillas
  • 1/2 cup Greek yogurt or sour cream
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cauliflower florets with olive oil, chili powder, cumin, salt, and pepper until well-coated.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes until tender and slightly browned.
  4. While the cauliflower is roasting, prepare the cilantro lime crema by mixing Greek yogurt or sour cream with chopped cilantro, lime juice, and salt in a bowl.
