A delicious recipe for cauliflower tacos featuring roasted florets topped with a refreshing cilantro lime crema.
Ingredients
- 1 head of cauliflower, chopped into florets
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Corn or flour tortillas
- 1/2 cup Greek yogurt or sour cream
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cauliflower florets with olive oil, chili powder, cumin, salt, and pepper until well-coated.
- Spread the cauliflower on a baking sheet and roast for 25-30 minutes until tender and slightly browned.
- While the cauliflower is roasting, prepare the cilantro lime crema by mixing Greek yogurt or sour cream with chopped cilantro, lime juice, and salt in a bowl.
- Warm up your corn or flour tortillas in a skillet or microwave.
- Assemble your tacos by adding the roasted cauliflower to the tortillas and drizzling with cilantro lime crema.
- Add any additional toppings of your choice and serve immediately.
Notes
For a crispier texture, broil the cauliflower for the last 2-3 minutes of roasting. Experiment with spices like garlic powder or smoked paprika for added depth.
