Description

A healthy twist on traditional fried rice, combining riced cauliflower and shrimp for a quick, flavorful meal.


Ingredients

  • 1 medium cauliflower, riced
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions, chopped for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Add shrimp and cook until they turn pink, about 2-3 minutes.
  4. Push shrimp to one side of the skillet; scramble the beaten eggs on the empty side until fully cooked.
  5. Stir in riced cauliflower and mixed vegetables; sauté for an additional 5 minutes until cauliflower is tender.
  6. Add soy sauce and sesame oil; mix everything thoroughly.
  7. Season with salt and pepper to taste before removing from heat.
  8. Serve hot, garnished with chopped green onions.

Notes

Feel free to adjust the vegetable mix as per your preference. For a spicier version, add red pepper flakes.
