Description
A healthy twist on traditional fried rice, combining riced cauliflower and shrimp for a quick, flavorful meal.
Ingredients
- 1 medium cauliflower, riced
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Green onions, chopped for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté until fragrant.
- Add shrimp and cook until they turn pink, about 2-3 minutes.
- Push shrimp to one side of the skillet; scramble the beaten eggs on the empty side until fully cooked.
- Stir in riced cauliflower and mixed vegetables; sauté for an additional 5 minutes until cauliflower is tender.
- Add soy sauce and sesame oil; mix everything thoroughly.
- Season with salt and pepper to taste before removing from heat.
- Serve hot, garnished with chopped green onions.
Notes
Feel free to adjust the vegetable mix as per your preference. For a spicier version, add red pepper flakes.
