A quick and healthy meal featuring canned tuna mixed with sushi rice, creamy avocado, crunchy cucumbers, and zesty green onions.
Ingredients
- 2 cups cooked sushi rice
- 1 can tuna
- 2 tablespoons Kewpie mayonnaise
- 1 tablespoon sriracha (or additional mayonnaise for less heat)
- 1/2 teaspoon fresh lemon juice
- 1/2 teaspoon toasted sesame oil
- Sliced avocado
- Diced cucumbers
- Sliced green onions
- Roasted sesame seeds
Instructions
- Drain some of the liquid from the canned tuna, then use your hands to squeeze out the remaining moisture.
- In a small bowl, combine the drained tuna, mayonnaise, sriracha, lemon juice, and toasted sesame oil.
- In a large bowl, add the cooked sushi rice, spicy tuna mixture, cucumbers, and avocado. Mix until combined.
- Drizzle on extra mayonnaise and sriracha to taste. Sprinkle green onions and sesame seeds on top.
