Description

A quick and healthy meal featuring canned tuna mixed with sushi rice, creamy avocado, crunchy cucumbers, and zesty green onions.


Ingredients

  • 2 cups cooked sushi rice
  • 1 can tuna
  • 2 tablespoons Kewpie mayonnaise
  • 1 tablespoon sriracha (or additional mayonnaise for less heat)
  • 1/2 teaspoon fresh lemon juice
  • 1/2 teaspoon toasted sesame oil
  • Sliced avocado
  • Diced cucumbers
  • Sliced green onions
  • Roasted sesame seeds


Instructions

  1. Drain some of the liquid from the canned tuna, then use your hands to squeeze out the remaining moisture.
  2. In a small bowl, combine the drained tuna, mayonnaise, sriracha, lemon juice, and toasted sesame oil.
  3. In a large bowl, add the cooked sushi rice, spicy tuna mixture, cucumbers, and avocado. Mix until combined.
  4. Drizzle on extra mayonnaise and sriracha to taste. Sprinkle green onions and sesame seeds on top.
  5. Enjoy!

Notes

For added crunch, consider incorporating other fresh veggies like bell peppers or radishes. Store components separately until ready to eat for the best freshness.
