Description

A quick and satisfying pasta dish made with canned salmon, fresh cherry tomatoes, and parsley, perfect for busy weeknights.


Ingredients

  • 8 oz pasta (spaghetti or your choice)
  • 1 can (14.75 oz) canned salmon, drained
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Pepper to taste
  • Parmesan cheese for serving (optional)


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the cherry tomatoes and cook for an additional 2-3 minutes until they begin to soften.
  4. Stir in the drained canned salmon and heat through.
  5. Add the cooked pasta to the skillet and toss to combine.
  6. Season with salt, pepper, and fresh parsley.
  7. Serve with Parmesan cheese on top if desired.

Notes

For an extra flavor kick, consider adding crushed red pepper flakes when sautéing the garlic. This addition will introduce subtle heat. Feel free to substitute or combine parsley with other fresh herbs like basil or dill.
