Ingredients
- 2 cups whole milk
- 2 cups water
- 1/2 teaspoon kosher salt
- 1 cup uncooked grits
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
- 1/4 cup unsalted butter
- 1/2 cup grated cheddar cheese
- 1 pound medium shrimp, peeled and deveined
- 2 tablespoons unsalted butter
- 3 garlic cloves, minced
- 2 teaspoons Cajun seasoning
- 1 teaspoon lime juice
- Chopped parsley or sliced green onions or chives, for garnish
Instructions
- In a saucepan over medium heat, combine the whole milk, water, and kosher salt. Bring to a boil.
- Add the uncooked grits, freshly ground black pepper, and garlic powder. Whisk until smooth and lump-free, allowing to thicken slightly.
- Reduce heat to medium-low, cover the saucepan, and cook for 10 to 12 minutes, stirring occasionally.
- Once cooked and liquid is absorbed, remove from heat. Stir in the unsalted butter and grated cheddar cheese until melted. Cover to keep warm.
- In a large skillet over medium-high heat, melt the unsalted butter. Add the minced garlic, cooking until fragrant.
- Add the shrimp in a single layer. Cook for about 2 minutes on each side until pink and cooked through.
- Sprinkle Cajun seasoning and lime juice over the shrimp, stirring to incorporate.
- Spoon the warm grits onto plates and top with the shrimp mixture. Garnish with parsley or green onions. Serve immediately.
