Description

A lighter take on the classic Buffalo chicken, these lettuce wraps are filled with tender chicken, spicy sauce, and fresh veggies for a burst of flavor.


Ingredients

  • 2 large chicken breasts (cooked and shredded)
  • 2 tablespoons butter
  • ½ tablespoon olive oil
  • ½ cup Frank’s Red Hot Wing Sauce
  • ½ teaspoon celery seed
  • Fresh pepper to taste
  • ½ cup thinly sliced celery
  • Blue cheese crumbles
  • Ranch dressing
  • 2 heads of lettuce (romaine or iceberg, rinsed and patted dry)


Instructions

  1. In a large pan, cook and shred your chicken.
  2. Place the chicken in the pan over medium/high heat with ½ cup of water, shredding it with two forks as it cooks.
  3. Add the butter and olive oil, stirring until melted and combined.
  4. Pour in the hot sauce and add the celery seed along with fresh pepper to taste.
  5. Remove from heat and gently stir in the thinly sliced celery.
  6. Scoop a spoonful of the chicken mixture into the lettuce leaves.
  7. Sprinkle with blue cheese crumbles and drizzle with ranch dressing.
  8. Serve immediately while the chicken is still warm.
