Description

A comforting baked cod dish with a crispy panko topping, perfect for busy weeknights.

Ingredients

  • 4 fillets of cod (fresh preferred or thawed frozen)
  • 2 tablespoons of butter (or olive oil for a dairy-free option)
  • 1 cup of panko breadcrumbs
  • 2 tablespoons of freshly chopped parsley (or dried thyme as an alternative)
  • 1 teaspoon of garlic powder
  • 1 teaspoon of lemon zest (or lime zest if preferred)
  • 1 teaspoon of salt (adjust to taste)
  • 1 teaspoon of pepper (freshly cracked offers better flavor)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using frozen cod, ensure the fillets are fully thawed and pat them dry with a paper towel.
  3. In a bowl, mix breadcrumbs, finely chopped parsley, garlic powder, lemon zest, salt, and freshly cracked pepper. Blend all the ingredients thoroughly.
  4. In a separate bowl, melt the butter (or olive oil if using a dairy-free option) in the microwave.
  5. Coat each cod fillet with the melted butter, allowing excess to drip off before transferring it to the breadcrumb mixture.
  6. Press the breadcrumb mixture firmly onto the top of each fillet to ensure it adheres well.
  7. Arrange the cod fillets in an even layer in a baking dish.
  8. Drizzle any remaining melted butter over the fillets for added moisture.
  9. Bake in the preheated oven for 15 to 20 minutes or until the cod is cooked through and the topping is golden brown.
  10. Serve immediately and enjoy the delightful textures and flavors!

Notes

Experiment with different herbs and spices for varied flavors. Adjust the cooking time based on the thickness of the fillets.
