Ingredients

  • 4 (6-ounce) salmon fillets, skin on or off
  • 2 tablespoons blackened seasoning blend
  • 1 tablespoon olive oil or avocado oil
  • 1 tablespoon unsalted butter
  • Lemon wedges for serving (optional)
  • Fresh parsley, chopped, for garnish (optional)


Instructions

  1. Pat salmon fillets dry with paper towels to achieve a crispy crust.
  2. Generously coat both sides of each salmon fillet with blackened seasoning, pressing gently to ensure it adheres well.
  3. Heat olive oil or avocado oil in a large cast-iron skillet or heavy-bottomed pan over medium-high heat until shimmering.
  4. Add butter to the pan; once melted, swirl to coat the bottom of the pan.
  5. Carefully place salmon fillets, skin-side down if applicable, in the hot skillet. Do not overcrowd the pan; cook in batches if necessary.
  6. Sear for 3-5 minutes per side, depending on thickness, until the salmon is cooked through and a dark, crispy crust forms.
  7. For skin-on salmon, cook mostly skin-side down until crispy, then flip for a minute or two to finish.
  8. Remove the salmon from the skillet and let it rest for a minute or two before serving.
  9. Serve immediately with lemon wedges and a sprinkle of fresh parsley, if desired.
