Delicious blackened shrimp tacos topped with zesty slaw, perfect for quick weeknight meals.
Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 8 small corn tortillas
- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1/2 cup mayonnaise
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a bowl, toss the shrimp with Cajun seasoning until well coated.
- Heat olive oil in a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until blackened and cooked through.
- In another bowl, combine shredded cabbage, carrots, mayonnaise, lime juice, salt, and pepper to make the slaw. Mix well.
- Warm the tortillas in another pan.
- Assemble the tacos by placing shrimp on tortillas and top with slaw. Serve immediately.
Notes
Don’t overcrowd the pan when cooking shrimp for even cooking. Use fresh ingredients for the best flavor.
