Description

A delectable blackened salmon dish stuffed with creamy spinach and Parmesan, perfect for busy weeknights or special gatherings.


Ingredients

  • 4 salmon fillets (6 oz each, skinless)
  • 2 cups fresh spinach
  • 1/2 cup cream cheese, softened
  • 1/3 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Lemon wedges for serving


Instructions

  1. Cook the spinach in a skillet over medium heat until it wilts, about 2-3 minutes. Drain any excess liquid.
  2. Mix cooked spinach with softened cream cheese, grated Parmesan, and minced garlic. Season with salt and pepper, stirring until creamy.
  3. Create pockets in each salmon fillet by slicing horizontally but leaving the other end intact.
  4. Fill each pocket generously with the spinach and cheese mixture.
  5. Combine paprika, garlic powder, onion powder, black pepper, and additional salt. Rub this spice blend over the tops of the salmon fillets.
  6. Heat olive oil in a skillet over medium-high heat. Sear the salmon fillets for 2-3 minutes on each side until crispy.
  7. Transfer the seared salmon to a preheated oven and bake for 10-12 minutes, or until cooked through and flaky.
  8. Serve blackened salmon stuffed with spinach and Parmesan along with lemon wedges.

Notes

For a touch of spice, add cayenne pepper to the spice mix. Ensure your kitchen is well-ventilated while cooking.
