A delectable blackened salmon dish stuffed with creamy spinach and Parmesan, perfect for busy weeknights or special gatherings.
Ingredients
- 4 salmon fillets (6 oz each, skinless)
- 2 cups fresh spinach
- 1/2 cup cream cheese, softened
- 1/3 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- Salt to taste
- Lemon wedges for serving
Instructions
- Cook the spinach in a skillet over medium heat until it wilts, about 2-3 minutes. Drain any excess liquid.
- Mix cooked spinach with softened cream cheese, grated Parmesan, and minced garlic. Season with salt and pepper, stirring until creamy.
- Create pockets in each salmon fillet by slicing horizontally but leaving the other end intact.
- Fill each pocket generously with the spinach and cheese mixture.
- Combine paprika, garlic powder, onion powder, black pepper, and additional salt. Rub this spice blend over the tops of the salmon fillets.
- Heat olive oil in a skillet over medium-high heat. Sear the salmon fillets for 2-3 minutes on each side until crispy.
- Transfer the seared salmon to a preheated oven and bake for 10-12 minutes, or until cooked through and flaky.
- Serve blackened salmon stuffed with spinach and Parmesan along with lemon wedges.
Notes
For a touch of spice, add cayenne pepper to the spice mix. Ensure your kitchen is well-ventilated while cooking.
