A flavorful blend of blackened salmon with creamy Cajun sauce served over linguine, perfect for weeknight dinners.
Ingredients
- 8 oz linguine pasta
- 1 lb salmon fillets
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the linguine pasta according to package instructions. Drain and set aside.
- Season the salmon fillets with Cajun seasoning, salt, and pepper.
- In a skillet, heat olive oil over medium-high heat, then add the salmon. Cook for 4-5 minutes on each side until seared and cooked through. Remove from skillet and set aside.
- In the same skillet, add diced onions and garlic; sauté until onions are translucent.
- Stir in the diced tomatoes, heavy cream, and cheddar cheese. Allow the sauce to simmer and thicken slightly.
- Add the cooked linguine to the sauce, tossing to coat.
- Slice the cooked salmon and serve on top of the pasta.
- Garnish with fresh parsley before serving.
Notes
For a lighter version, reduce the amount of heavy cream or substitute with half-and-half. Add vegetables like spinach or bell peppers for extra flavor and nutrition.
