Description

A hearty quiche featuring a crispy hashbrown crust, filled with eggs, cheese, and vegetables, perfect for brunch or a quick meal.

Ingredients

  • 2 cups grated potatoes
  • 1 cup shredded cheese (cheddar or choice)
  • 4 large eggs
  • 1 cup milk
  • 1 cup diced vegetables (e.g., bell peppers, spinach, onions)
  • 1 cup cooked meats (bacon, sausage, ham – optional)
  • Salt and pepper to taste
  • Butter or oil for greasing the baking dish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Press the grated potatoes to remove moisture, then mix with salt and pepper to taste.
  3. Press the potato mixture into the bottom and up the sides of a greased pie dish, creating a crust. Bake for 25-30 minutes until golden and crispy.
  4. In a bowl, beat the eggs and milk together. Incorporate the shredded cheese, diced vegetables, and cooked meats, if desired.
  5. Pour the filling mixture over the hashbrown crust.
  6. Bake for an additional 30-35 minutes, until the egg sets and the top is golden.
  7. Allow the quiche to cool for a few minutes before slicing and serving.

Notes

Experiment with different vegetables and cheeses to customize the flavors. Pre-cook moist vegetables to prevent a soggy quiche.
