Ingredients
- 2 cups grated potatoes
- 1 cup shredded cheese (cheddar or choice)
- 4 large eggs
- 1 cup milk
- 1 cup diced vegetables (e.g., bell peppers, spinach, onions)

Instructions
- Preheat the oven to 400°F (200°C).

- Press the potato mixture into the bottom and up the sides of a greased pie dish, creating a crust. Bake for 25-30 minutes until golden and crispy.
- In a bowl, beat the eggs and milk together. Incorporate the shredded cheese, diced vegetables, and cooked meats, if desired.
- Pour the filling mixture over the hashbrown crust.
- Bake for an additional 30-35 minutes, until the egg sets and the top is golden.
- Allow the quiche to cool for a few minutes before slicing and serving.
Notes
Experiment with different vegetables and cheeses to customize the flavors. Pre-cook moist vegetables to prevent a soggy quiche.
