Ingredients
- Fresh haddock fillets
- All-purpose flour
- Salt
- Freshly ground pepper
- Olive oil
- Unsalted butter
- Fresh garlic, minced
- Fresh lemon juice
- Capers
- Fresh parsley, chopped for garnish
Instructions
- Season haddock fillets with salt and pepper, then dredge in flour.
- Heat olive oil and butter in a skillet over medium heat.
- Add the haddock fillets and cook until golden brown, about 3–4 minutes per side.
- Remove the fish and set aside.
- In the same skillet, add minced garlic and cook for 30 seconds.
- Stir in lemon juice and capers, scraping up any browned bits from the pan.
- Return the haddock to the skillet, spooning the sauce over the fillets.
- Garnish with fresh parsley and serve immediately.
Notes
Use fresh haddock for best results. Dredging in flour creates a crispy crust. Adjust lemon juice to taste.
