Ingredients

  • – 1/2 cup (120 ml) cane sugar
  • – 1/4 cup (60 ml) soy sauce
  • – 2 garlic cloves, grated
  • – 1 teaspoon (5 ml) grated ginger
  • – 1/8 teaspoon (1 ml) ground black pepper
  • – 4 boneless skinless chicken thighs
  • – 1 teaspoon (5 ml) cornstarch
  • – Air Fryer


Instructions

  1. Combine the teriyaki sauce components in a bowl or measuring cup, stirring for 1 to 2 minutes until most of the sugar dissolves.
  2. Dry the chicken thighs with paper towels, then place them in a medium-sized bowl. Pour in about half of the teriyaki sauce and mix well to ensure the chicken is coated thoroughly. Allow it to marinate for about 30 minutes, or cook after 5 minutes if you’re short on time.
  3. Meanwhile, pour the remaining sauce into a small saucepan, add the cornstarch (stir to dissolve), and heat over low heat until it begins to boil. Let it simmer for 30 to 40 seconds before removing it from the heat. The sauce will thicken as it cools.
  4. Set the air fryer to preheat at 400°F for 7 minutes. Once ready, place the chicken thighs with the smooth side facing down in the air fryer basket and start cooking.
  5. After the initial cooking time, open the air fryer, apply some teriyaki sauce to the chicken, flip them using tongs, and brush the other side with the sauce.
  6. Continue cooking for another 6 to 7 minutes at the same temperature. For chicken breasts, cook at 380°F for 6 minutes, flip, and cook for an additional 6 minutes or until fully cooked.
  7. Once finished, apply more sauce to the top of the chicken.

Notes

  • Marinate chicken thighs in teriyaki sauce for a richer flavor, ideally overnight in the fridge.
  • Pat chicken dry with paper towels before marinating to ensure even cooking.
  • Adjust teriyaki sauce sweetness or saltiness to taste with more or less sugar or soy sauce.
