Ingredients
- – 1 pound (454 g) chicken breast, skinless and boneless, cut into 1-inch (2.54 cm) bite-size pieces
- – 2 tablespoons (30 ml) arrowroot starch
- – 1 tablespoon (15 ml) arrowroot starch
- – 1/4 cup (60 ml) cold water
- – 1/4 cup (60 ml) low-sodium soy sauce, use tamari if gluten-free
- – 1/4 cup (60 ml) fresh orange juice, juice from 1 orange
- – 1 tablespoon (15 ml) rice vinegar
- – 2 – 3 tablespoons (38 ml) honey, based on your desired sweetness level
- – 1/2 teaspoon (3 ml) sesame oil
- – 1 teaspoon (5 ml) fresh grated ginger, very fine
- – 2 garlic cloves, minced
Instructions
- Warm up your air fryer to 360°F.
- In a large bowl, mix the chicken pieces with arrowroot starch until they are well-coated.
- When the air fryer is ready, lightly coat it with cooking spray and place the chicken pieces inside, ensuring they are not touching. If your air fryer is on the smaller side, you may need to cook in two rounds.
- Air fry for 8 to 10 minutes, making sure the chicken is fully cooked and has an internal temperature of 165°F.
- As the chicken cooks, combine the arrowroot starch with cold water until smooth and set aside.
- In a small pot over medium-high heat, combine the low-sodium soy sauce, fresh orange juice, rice vinegar, honey, sesame oil, ginger, and garlic. Allow the mixture to come to a boil. Once it starts boiling, lower the heat to medium-low and mix in the arrowroot starch solution. Let it simmer for 3 to 4 minutes, stirring continuously until the sauce thickens. Sample the sauce and adjust flavors as needed.
- Place the cooked chicken pieces in the saucepan with the teriyaki sauce. Gently stir to ensure even coating, then remove from heat.
- Serve hot over rice, accompanied by your choice of roasted or steamed vegetables.
Notes
- Make sure to use tamari instead of low-sodium soy sauce for a gluten-free option in the teriyaki sauce.
- Adjust the honey amount to suit your desired level of sweetness in the teriyaki sauce.
- Finely grate the ginger to ensure it blends well into the sauce for the Best Air Fryer Teriyaki Chicken Recipe.
