Crispy and healthy Bang Bang Salmon Bites with a balance of spicy and sweet flavors, perfect for a quick dinner.
Ingredients
- 1 lb fresh salmon, skinless and cut into bite-sized cubes
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 cup panko breadcrumbs
- 1 tbsp olive oil or spray for crisping
- ½ cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (adjust based on your spice level)
- 1 tsp honey (optional)
- Juice of ½ lime
- 2 cups cooked jasmine rice (or cauliflower rice)
- 1 cup shredded purple cabbage
- 1 avocado (sliced)
- ½ cup shredded carrots
- 2 green onions (sliced)
- Fresh cilantro and sesame seeds for garnish
Instructions
- Preheat your oven or air fryer to 400°F.
- In a large bowl, mix together the garlic powder, smoked paprika, salt, and black pepper. Toss the salmon cubes until well-coated in the seasoning.
- Individually coat each seasoned salmon piece in panko breadcrumbs.
- Place the breaded salmon bites on the prepared baking sheet or in the air fryer basket, ensuring they don’t overlap.
- Lightly spray the salmon bites with olive oil or use an oil spray for crisping.
- Bake for 12-15 minutes or air-fry for 8-10 minutes until golden brown and cooked through.
- In a small bowl, combine the mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice. Mix until creamy and smooth to prepare the bang bang sauce.
- Once cooked, let the salmon cool slightly. Assemble the bowls with jasmine rice or cauliflower rice at the bottom, followed by shredded purple cabbage, sliced avocado, shredded carrots, and green onions.
- Top with the crispy salmon bites and drizzle generously with the bang bang sauce. Garnish with fresh cilantro and sesame seeds as desired.
Notes
For extra crunch, consider mixing panko with crushed cornflakes. Adjust the spiciness of the sauce to suit your taste.
