Ingredients
- 2 cups cooked rice
- 1 cup diced chicken
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, bell peppers, peas)
- 2 tablespoons soy sauce
- 2 tablespoons bang bang sauce
- 1 tablespoon oil for frying
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Heat oil in a large pan over medium heat.
- Add the diced chicken and cook until browned and cooked through.
- Push the chicken to the side and pour in the beaten eggs, scrambling until fully cooked.
- Add mixed vegetables to the pan and stir-fry for a few minutes.
- Stir in the cooked rice, soy sauce, and bang bang sauce, mixing everything together until heated through.
- Adjust seasoning with salt and pepper.
- Serve hot, garnished with chopped green onions if desired.
Notes
For best results, use cold, day-old rice. Customize with your choice of protein and veggies.
