Ingredients
- – 2/3 cup (160 ml) mayonnaise
- – 4 tablespoons (60 ml) sweet chili sauce
- – 2 tablespoons (30 ml) Sriracha sauce
- – 1 tablespoon (15 ml) honey
- – 1 tablespoon (15 ml) lime juice
- – 2 teaspoons (10 ml) soy sauce
- – 2 large chicken breasts or thighs/tenderloins, cut into cubes, about 1 lb (450 g)
- – 1/2 teaspoon (3 ml) salt
- – 1 teaspoon (5 ml) smoked paprika
- – 1 teaspoon (5 ml) garlic powder
- – 1 tablespoon (15 ml) chopped cilantro (fresh coriander)
- – Bamboo or metal skewers
- – Vegetable oil spray if needed
Instructions
- Prepare the dipping sauce by combining all the sauce components in a mixing bowl. Set this mixture aside for later use.
- Season the chicken pieces by mixing them with salt, garlic powder, and smoked paprika until well-coated.
- Marinate the chicken by adding 4-5 tablespoons of the prepared sauce to it, ensuring even coverage, and let it rest for 10-15 minutes or leave it overnight for a deeper flavor.
- If using bamboo skewers, soak them in water beforehand, then thread 6-8 chicken pieces onto each skewer.
- Preheat a barbecue grill to medium-high heat. Cook the chicken skewers for 8-10 minutes on each side, until they are fully cooked and have a slight char.
- Once cooked, brush the skewers with additional sauce and sprinkle with fresh cilantro before serving while hot.
