Ingredients

  • – 2/3 cup (160 ml) mayonnaise
  • – 4 tablespoons (60 ml) sweet chili sauce
  • – 2 tablespoons (30 ml) Sriracha sauce
  • – 1 tablespoon (15 ml) honey
  • – 1 tablespoon (15 ml) lime juice
  • – 2 teaspoons (10 ml) soy sauce
  • – 2 large chicken breasts or thighs/tenderloins, cut into cubes, about 1 lb (450 g)
  • – 1/2 teaspoon (3 ml) salt
  • – 1 teaspoon (5 ml) smoked paprika
  • – 1 teaspoon (5 ml) garlic powder
  • – 1 tablespoon (15 ml) chopped cilantro (fresh coriander)
  • – Bamboo or metal skewers
  • – Vegetable oil spray if needed


Instructions

  1. Prepare the dipping sauce by combining all the sauce components in a mixing bowl. Set this mixture aside for later use.
  2. Season the chicken pieces by mixing them with salt, garlic powder, and smoked paprika until well-coated.
  3. Marinate the chicken by adding 4-5 tablespoons of the prepared sauce to it, ensuring even coverage, and let it rest for 10-15 minutes or leave it overnight for a deeper flavor.
  4. If using bamboo skewers, soak them in water beforehand, then thread 6-8 chicken pieces onto each skewer.
  5. Preheat a barbecue grill to medium-high heat. Cook the chicken skewers for 8-10 minutes on each side, until they are fully cooked and have a slight char.
  6. Once cooked, brush the skewers with additional sauce and sprinkle with fresh cilantro before serving while hot.

Notes

  • Marinate chicken for at least 10-15 minutes for optimal flavor, or marinate overnight for a richer taste.
  • Soak bamboo skewers in water before threading chicken to prevent burning on the grill.
