Description

A flavorful bowl featuring succulent chicken, vibrant vegetables, and a sweet and spicy sauce, perfect for busy weeknights.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 3 green onions, chopped
  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 2 tablespoons oil (for cooking)
  • Sesame seeds (for garnishing)


Instructions

  1. Cut the chicken breasts into bite-sized pieces. Season them with salt and pepper to taste.
  2. Heat oil in a large skillet over medium heat. Add the chicken pieces and cook until golden brown and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the broccoli, sliced red bell pepper, and julienned carrot. Sauté for about 3-5 minutes until the vegetables are tender yet crisp.
  4. In a small bowl, mix the mayonnaise, sweet chili sauce, Sriracha sauce, and soy sauce until well combined.
  5. Return the cooked chicken to the skillet with the sautéed vegetables. Pour the sauce over everything and stir well to coat evenly.
  6. In serving bowls, place a layer of cooked rice as the base.
  7. Spoon the chicken and vegetable mixture over the rice.
  8. Garnish with chopped green onions and a sprinkle of sesame seeds for an added touch.
  9. Serve immediately to enjoy the Bang Bang Chicken Bowl while it’s fresh and hot!

Notes

Feel free to adjust the spice level by modifying the amount of Sriracha. This dish can also be made vegetarian by using tofu or chickpeas.
