Ingredients
- 3/4 lb (340 g) jumbo shrimp, peeled and deveined
- 2 9 oz (255 g) packages of beef cheese tortellini
- 2 – 2 1/2 C (480 – 600 ml) marinara or spaghetti sauce
- 1/2 – 3/4 C (120 – 180 ml) shredded mozzarella cheese
- 5 tbsp (23 ml) parmesan cheese
- 2 tbsp (30 ml) vegetable oil
- salt and pepper to taste
- fresh chopped parsley for garnish
Instructions
- Turn your broiler to the highest setting.
- Prepare the tortellini following the instructions on the packaging and set them aside. Add salt and pepper to the shrimp, coat them with vegetable oil, and sauté in an oven-safe pan over medium heat for 3-5 minutes per side until they turn pink. Take them out of the pan and keep them aside. You can now turn off the stove.
- Combine the cooked tortellini with the marinara sauce and transfer them back into the pan. Arrange the shrimp on top and scatter parmesan cheese followed by mozzarella cheese over them.
- Broil until the cheese is bubbly and has a light golden color.
