Ingredients

  • 3/4 lb (340 g) jumbo shrimp, peeled and deveined
  • 2 9 oz (255 g) packages of beef cheese tortellini
  • 2 – 2 1/2 C (480600 ml) marinara or spaghetti sauce
  • 1/2 – 3/4 C (120180 ml) shredded mozzarella cheese
  • 5 tbsp (23 ml) parmesan cheese
  • 2 tbsp (30 ml) vegetable oil
  • salt and pepper to taste
  • fresh chopped parsley for garnish


Instructions

  1. Turn your broiler to the highest setting.
  2. Prepare the tortellini following the instructions on the packaging and set them aside. Add salt and pepper to the shrimp, coat them with vegetable oil, and sauté in an oven-safe pan over medium heat for 3-5 minutes per side until they turn pink. Take them out of the pan and keep them aside. You can now turn off the stove.
  3. Combine the cooked tortellini with the marinara sauce and transfer them back into the pan. Arrange the shrimp on top and scatter parmesan cheese followed by mozzarella cheese over them.
  4. Broil until the cheese is bubbly and has a light golden color.
