Description

A delightful and nutritious baked salmon dish featuring a zesty lemon butter sauce, paired with crispy roasted potatoes and vibrant broccoli.


Ingredients

  • 2 salmon fillets
  • 2 tablespoons butter
  • 1 lemon (juiced and zested)
  • Salt and pepper to taste
  • 2 cups potatoes (cubed)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 2 cups broccoli florets


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and bake for 20-25 minutes until crispy.
  3. While the potatoes are baking, season the salmon fillets with salt and pepper.
  4. In a small saucepan, melt the butter over medium heat, add lemon juice and zest, and stir.
  5. In the last 10 minutes of potato cooking time, add the salmon fillets to the baking sheet.
  6. After 5 minutes, add broccoli florets around the salmon and drizzle with lemon butter sauce.
  7. Bake everything for an additional 10 minutes or until salmon is cooked through and broccoli is tender.
  8. Serve salmon with roasted potatoes and broccoli, drizzling any remaining lemon butter sauce over the top.

Notes

Let salmon sit at room temperature for 15 minutes before cooking for even cooking. Experiment with adding red pepper flakes or herbs to the lemon butter sauce.
