A wholesome and quick baked salmon dish with a vibrant lemon butter sauce, perfect for weeknight dinners or special occasions.
Ingredients
- 4 salmon fillets
- 2 tablespoons butter
- 2 tablespoons lemon juice
- 1 teaspoon garlic, minced
- Salt and pepper to taste
- 2 large potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 cup broccoli florets
Instructions
- Preheat the oven to 400°F (200°C).
- Melt the butter in a small saucepan and mix in lemon juice and minced garlic.
- Place the salmon fillets in a baking dish, season with salt and pepper, and drizzle the lemon butter sauce over them.
- Toss the diced potatoes with olive oil, paprika, salt, and pepper, and spread them on a baking sheet.
- Bake the potatoes for 20 minutes.
- Add the salmon to the oven and bake for an additional 12-15 minutes, until cooked through and flakes easily.
- During the last 5 minutes, add the broccoli to the baking sheet with the potatoes.
- Serve the baked salmon with roasted potatoes and broccoli.
Notes
For extra flavor, marinate salmon in the lemon butter sauce before baking and add fresh herbs for garnish.
