Description

A light and flavorful dish featuring tilapia fillets baked with lemon and Parmesan for a quick, healthy weeknight meal.


Ingredients

  • 1.52 lbs tilapia fillets (about 4-6 fillets)
  • 2 medium-sized fresh lemons
  • ½ cup Parmesan cheese (grated)
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper (freshly ground or to taste)
  • ¼ cup breadcrumbs (Panko or regular) – optional for extra crispy topping


Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Zest one lemon and juice it, collecting 2-3 tablespoons of the juice. Slice the other lemon into thin rounds.
  3. Rinse and pat dry the tilapia fillets to ensure the Parmesan mixture adheres well.
  4. In a bowl, mix the grated Parmesan, minced garlic, lemon zest, dried oregano, and dried parsley. In another bowl, whisk the olive oil and lemon juice together.
  5. Brush each fillet with the lemon-olive oil mixture, sprinkle the Parmesan mixture on top, and place lemon slices on each fillet.
  6. Bake the tilapia for 12-15 minutes or until the fish flakes easily and is opaque throughout. Optionally, broil for 1-2 minutes for a golden crust.
  7. Serve immediately, garnished with fresh parsley and extra lemon wedges.

Notes

For added flavor, consider fresh herbs like thyme or basil, and for some spice, add red pepper flakes.
