Ingredients

  • 2 halibut fillets
  • 2 cups baby potatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 lemon, sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, toss the halibut fillets and halved potatoes with olive oil, garlic, thyme, salt, and pepper.
  3. Arrange lemon slices on top of the halibut.
  4. Bake for 20-25 minutes or until the fish is flaky and the potatoes are tender.
