Ingredients

  • 1 cup cottage cheese (recommended 4% fat)
  • 4 large eggs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh chives, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/4 cup diced bell peppers
  • Optional: 1/4 cup spinach
  • Optional: 2 tablespoons sun-dried tomatoes


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9-inch baking dish or an 8×8-inch square dish.
  3. In a blender, pulse the cottage cheese until smooth.
  4. In a bowl, beat the eggs and mix in the blended cottage cheese, Parmesan, chives, garlic powder, paprika, salt, and pepper.
  5. If desired, fold in optional ingredients like peppers, spinach, or sun-dried tomatoes.
  6. Pour the mixture into the prepared dish.
