Ingredients
- 4 fresh cod fillets
- 1 can of coconut milk
- Juice and zest of 1 lemon
- 1 tablespoon freshly grated ginger
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix coconut milk, lemon juice, lemon zest, and grated ginger.
- Season the cod fillets with salt and pepper and place them in a baking dish.
- Pour the coconut lemon mixture over the cod, ensuring they are well coated.
- Bake for 20 to 25 minutes until the cod flakes easily with a fork.
- Garnish with fresh herbs before serving.
Notes
