Description

Ingredients

  • 4 fresh cod fillets
  • 1 can of coconut milk
  • Juice and zest of 1 lemon
  • 1 tablespoon freshly grated ginger
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix coconut milk, lemon juice, lemon zest, and grated ginger.
  3. Season the cod fillets with salt and pepper and place them in a baking dish.
