Description

A quick and delightful dish combining flaky cod with creamy coconut milk and zesty lemon, perfect for busy weeknights.


Ingredients

  • 4 thick, white cod fillets
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can full-fat coconut milk
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the cod fillets generously with salt and pepper.
  3. Heat olive oil in a large sauté pan over medium heat, then sauté chopped onion until translucent.
  4. Add minced garlic and grated ginger, cooking until fragrant.
  5. Pour in the coconut milk, fresh lemon juice, and lemon zest, and mix well.
  6. Allow the sauce to simmer for a few minutes.
  7. Place the seasoned cod fillets in a baking dish and pour the coconut lemon cream sauce over them.
