Ingredients
- 4 thick, white cod fillets
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 can full-fat coconut milk
- 3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat your oven to 375°F (190°C).
- Season the cod fillets generously with salt and pepper.
- Heat olive oil in a large sauté pan over medium heat, then sauté chopped onion until translucent.
- Add minced garlic and grated ginger, cooking until fragrant.
- Pour in the coconut milk, fresh lemon juice, and lemon zest, and mix well.
- Allow the sauce to simmer for a few minutes.
- Place the seasoned cod fillets in a baking dish and pour the coconut lemon cream sauce over them.
- Bake in the preheated oven for 20-25 minutes, until the cod flakes easily with a fork.
