Ingredients

  • – 450g (1 lb) carrots, peeled
  • – 15ml (1 tbsp) vegetable oil
  • – 2.5ml (1/2 tsp) ground cumin
  • – 2.5ml (1/2 tsp) salt
  • – 1.25ml (1/4 tsp) ground black pepper
  • – 60ml (1/4 cup) fresh parsley, chopped
  • – 60ml (1/4 cup) vegan mayo
  • – 15-30ml (1-2 tbsp) sriracha sauce, to taste
  • – 10ml (2 tsp) lemon juice
  • – 2.5ml (1/2 tsp) garlic powder

Instructions

  1. Set your oven to 425°F and prepare a baking tray with parchment paper.
  2. Slice the peeled carrots into sticks, each about 4 inches long and no wider than 1/4 inch.
  3. On the baking tray, combine the carrot sticks with vegetable oil, cumin, salt, and pepper, ensuring they are evenly coated.
  4. Cook the carrots in the oven at 425°F for 25-30 minutes until they are tender and have a crisp exterior, turning them over around the halfway point.
  5. While the carrots are baking, prepare the sriracha mayo by mixing together the vegan mayo, sriracha sauce, lemon juice, and garlic powder. Adjust the sriracha to your liking.
  6. Present the carrot fries garnished with fresh parsley, alongside the sriracha mayo for dipping.

Notes

  • Consider adding smoked paprika or chili powder to the carrot sticks before baking for enhanced flavor.
  • Mix dairy-free yogurt or sour cream with sriracha mayo for a creamier dipping sauce.
  • Experiment with cilantro or dill instead of parsley for a unique garnish twist.
