Ingredients
- – 450g (1 lb) carrots, peeled
- – 15ml (1 tbsp) vegetable oil
- – 2.5ml (1/2 tsp) ground cumin
- – 2.5ml (1/2 tsp) salt
- – 1.25ml (1/4 tsp) ground black pepper
- – 60ml (1/4 cup) fresh parsley, chopped
- – 60ml (1/4 cup) vegan mayo
- – 15-30ml (1-2 tbsp) sriracha sauce, to taste
- – 10ml (2 tsp) lemon juice
- – 2.5ml (1/2 tsp) garlic powder
Instructions
- Set your oven to 425°F and prepare a baking tray with parchment paper.
- Slice the peeled carrots into sticks, each about 4 inches long and no wider than 1/4 inch.
- On the baking tray, combine the carrot sticks with vegetable oil, cumin, salt, and pepper, ensuring they are evenly coated.
- Cook the carrots in the oven at 425°F for 25-30 minutes until they are tender and have a crisp exterior, turning them over around the halfway point.
- While the carrots are baking, prepare the sriracha mayo by mixing together the vegan mayo, sriracha sauce, lemon juice, and garlic powder. Adjust the sriracha to your liking.
- Present the carrot fries garnished with fresh parsley, alongside the sriracha mayo for dipping.
Notes
- Consider adding smoked paprika or chili powder to the carrot sticks before baking for enhanced flavor.
- Mix dairy-free yogurt or sour cream with sriracha mayo for a creamier dipping sauce.
- Experiment with cilantro or dill instead of parsley for a unique garnish twist.
