Description

Delicious and vibrant Baja fish taco bowls featuring flaky cod fillets, fresh toppings, and warm corn tortillas.


Ingredients

  • 1 lb cod fillets
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Corn tortillas
  • 1 cup shredded cabbage
  • 1 avocado, diced
  • 1/2 cup salsa
  • Fresh cilantro for garnish
  • Lime wedges


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, cumin, chili powder, salt, and pepper.
  3. Coat the cod fillets with the spice mixture and place them on a baking sheet.
  4. Bake the cod for 12-15 minutes or until flaky.
  5. While the cod is baking, warm the corn tortillas in a skillet.
  6. To assemble, place a tortilla in a bowl, top with flaky cod, shredded cabbage, diced avocado, and salsa.
  7. Garnish with fresh cilantro and lime wedges before serving.

Notes
