Description

Delicious and healthy Baja fish taco bowls featuring flaky cod and fresh toppings.


Ingredients

  • Cod fillets
  • Olive oil
  • Lime juice
  • Cumin
  • Chili powder
  • Salt
  • Black pepper
  • Corn tortillas
  • Cabbage (shredded)
  • Tomato (diced)
  • Avocado (sliced)
  • Cilantro (chopped)
  • Sour cream or Greek yogurt (for serving)
  • Hot sauce (for serving)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix olive oil, lime juice, cumin, chili powder, salt, and black pepper in a bowl.
  3. Coat the cod fillets with the mixture and place them on a baking sheet.
  4. Bake in the oven for 12-15 minutes, or until the fish is flaky.
  5. Prepare the toppings: shred cabbage, dice tomatoes, and slice avocado.
  6. Warm the corn tortillas in a pan or microwave.
