Delicious and healthy Baja fish taco bowls featuring flaky cod and fresh toppings.
Ingredients
- Cod fillets
- Olive oil
- Lime juice
- Cumin
- Chili powder
- Salt
- Black pepper
- Corn tortillas
- Cabbage (shredded)
- Tomato (diced)
- Avocado (sliced)
- Cilantro (chopped)
- Sour cream or Greek yogurt (for serving)
- Hot sauce (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- Mix olive oil, lime juice, cumin, chili powder, salt, and black pepper in a bowl.
- Coat the cod fillets with the mixture and place them on a baking sheet.
- Bake in the oven for 12-15 minutes, or until the fish is flaky.
- Prepare the toppings: shred cabbage, dice tomatoes, and slice avocado.
- Warm the corn tortillas in a pan or microwave.
- Assemble the taco bowls: Place the tortillas in bowls, add flaky cod, top with cabbage, tomato, avocado, and cilantro.
- Drizzle with sour cream or Greek yogurt and add hot sauce if desired.

For richer flavor, marinate cod for 30 minutes. Prepare toppings ahead of time for quicker assembly.
