Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup fresh lime juice
- 1 avocado, diced
- 1/2 red onion, finely chopped
- 1 cup tomatoes, diced
- 1/2 cup cucumber, diced
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
- Tortilla chips for serving
Instructions
- In a bowl, combine the shrimp with lime juice, ensuring they are fully submerged. Cover and refrigerate for 30 minutes.
- After 30 minutes, drain the shrimp and add avocado, red onion, tomatoes, cucumber, and cilantro.
- Season with salt and pepper to taste and gently toss to combine.
- Serve chilled with tortilla chips.
Notes
For best results, use fresh lime juice and mix ingredients just before serving to avoid soggy vegetables.
