Description

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely chopped
  • 1 cucumber, diced
  • ¼ cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup fresh salsa (store-bought or homemade)
  • 2 cups mixed greens (optional, for serving)


Instructions

  1. Heat a skillet over medium-high heat and pour in olive oil. Add shrimp, sprinkle with garlic powder, salt, and pepper. Sauté for 2-3 minutes on each side until pink and opaque. Remove from heat and let cool.
  2. In a large bowl, combine avocados, cherry tomatoes, red onion, cucumber, and cilantro. Toss gently.
  3. Prepare dressing: whisk together lime juice, olive oil, salt, and pepper. Adjust seasoning to taste.
  4. Add shrimp and salsa to the vegetable mixture. Drizzle with dressing and toss gently to combine. Serve over mixed greens if desired.
