Ingredients
- 1 block of firm tofu, drained and cubed
- 2 cups mixed autumn vegetables (such as bell peppers, carrots, and broccoli)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice or quinoa for serving
Instructions
- Press the tofu to remove excess moisture, then cut it into cubes for even cooking.
- Heat olive oil in a large skillet over medium heat.
- Add the cubed tofu, cooking until golden brown on all sides.
- Stir in the minced garlic and ginger, sautéing for an additional minute.
- Add the mixed autumn vegetables to the skillet and sauté for about 5-7 minutes until tender.
- Pour in the soy sauce, mixing to combine, and cook for another 2 minutes.
- Season with salt and pepper to taste before removing from heat.
- Serve hot over cooked rice or quinoa.
Notes
For added flavor, marinate the tofu briefly in soy sauce before cooking. Consider adding sesame oil or rice vinegar for extra taste.
