Ingredients

  • 2 cup (480 ml) s shredded zucchini excess water wrung out
  • 1/2 onion shredded
  • 2 eggs
  • 1 cup (240 ml) breadcrumbs
  • 1/2 teaspoon (3 ml) salt
  • 1 teaspoon (5 ml) fresh dill
  • 1 teaspoon (5 ml) parsley
  • 1/2 teaspoon (3 ml) mint
  • 1/4 teaspoon (1 ml) pepper
  • Oil for spraying air fryer basket


Instructions

  1. Begin by setting your air fryer to a temperature of 370°F.
  2. Grate the zucchini, then use a clean cloth or paper towel to thoroughly remove any extra moisture.
  3. Combine all the components in a spacious bowl.
  4. Shape the mixture into 8 portions, flattening them to create patties. [Feel free to adjust the size, but remember to shorten the cooking duration if making smaller ones.]
  5. Lightly coat the air fryer basket with oil spray and place 4 patties (or as many as will fit) inside. Let them cook for 10 minutes. [Keep in mind they need to be prepared in batches. I did mine in 2 rounds, but this might vary depending on the dimensions of your air fryer basket.]

Notes

  • Thoroughly squeeze out excess water from shredded zucchini to prevent soggy fritters.
  • Customize herbs to your taste.
  • Adjust patty size but reduce cooking time for smaller ones.
