Ingredients
- 1 red bell pepper, large dice (150g)
- 1 orange bell pepper, large dice (150g)
- 1 medium red onion, large dice (150g)
- 1 large zucchini, sliced (200g)
- 1 large yellow squash, sliced (200g)
- 3 tbsp vegetable oil (45 ml)
- 2 tsp garlic powder (4g)
- 2 tsp onion powder (4g)
- 1 tsp paprika (2g)
- 1 tsp (5 ml) dried basil
- salt and pepper, to taste
- vegetarian cheese for serving, if desired
Instructions
- Warm up the air fryer to 400°F. Place the chopped veggies into a big bowl, pour vegetable oil and sprinkle with garlic powder, onion powder, paprika, and dried basil over them. Mix well to ensure everything is evenly coated.
- Lightly coat the air fryer basket with nonstick spray. Transfer the seasoned vegetables into the basket and cook for about 8 minutes or until they are soft. Adjust the seasoning with salt and pepper as needed and serve right away, adding vegetarian cheese on top if you like.
