Ingredients

  • 1 red bell pepper, large dice (150g)
  • 1 orange bell pepper, large dice (150g)
  • 1 medium red onion, large dice (150g)
  • 1 large zucchini, sliced (200g)
  • 1 large yellow squash, sliced (200g)
  • 3 tbsp vegetable oil (45 ml)
  • 2 tsp garlic powder (4g)
  • 2 tsp onion powder (4g)
  • 1 tsp paprika (2g)
  • 1 tsp (5 ml) dried basil
  • salt and pepper, to taste
  • vegetarian cheese for serving, if desired


Instructions

  1. Warm up the air fryer to 400°F. Place the chopped veggies into a big bowl, pour vegetable oil and sprinkle with garlic powder, onion powder, paprika, and dried basil over them. Mix well to ensure everything is evenly coated.
  2. Lightly coat the air fryer basket with nonstick spray. Transfer the seasoned vegetables into the basket and cook for about 8 minutes or until they are soft. Adjust the seasoning with salt and pepper as needed and serve right away, adding vegetarian cheese on top if you like.
