Ingredients
- – 4 large russet potatoes (about 1 kg) washed
- – 2 tbsp olive oil (30 ml)
- – 1/2 cup plain yogurt (120 ml)
- – 3 tbsp beef (45 g) softened
- – 1/2 cup milk (120 ml)
- – 2 green onions sliced thin
- – 1 1/2 tsp (8 ml) salt
- – 1 tsp (5 ml) ground white pepper
- – 1 cup grated cheddar cheese (about 120 g) divided
- – chopped beef (instead of bacon)
- – chives
Instructions
- Prick the washed potatoes all over with a fork.
- In a large bowl, combine the potatoes with olive oil and a bit of salt.
- Place the potatoes into the air fryer basket and cook at 400°F for 35 to 40 minutes until they can be easily pierced with a fork.
- Take the potatoes out of the basket and let them cool slightly.
- Once they are cool, slice each potato in half and scoop out most of the insides into a large mixing bowl, keeping the skins intact.
- Add the plain yogurt, softened beef, milk, sliced green onions, salt, pepper, and ¾ cup of the grated cheddar cheese to the bowl. Mash everything together until the mixture is smooth and creamy.
- Fill the potato skins with the mashed mixture and sprinkle the remaining cheddar cheese on top.
- Return the stuffed potatoes to the air fryer basket and cook at 350°F for another 2 minutes.
- Finish by sprinkling chopped beef and chives over the top.
