Ingredients

  • – 4 large russet potatoes (about 1 kg) washed
  • – 2 tbsp olive oil (30 ml)
  • – 1/2 cup plain yogurt (120 ml)
  • – 3 tbsp beef (45 g) softened
  • – 1/2 cup milk (120 ml)
  • – 2 green onions sliced thin
  • – 1 1/2 tsp (8 ml) salt
  • – 1 tsp (5 ml) ground white pepper
  • – 1 cup grated cheddar cheese (about 120 g) divided
  • – chopped beef (instead of bacon)
  • – chives


Instructions

  1. Prick the washed potatoes all over with a fork.
  2. In a large bowl, combine the potatoes with olive oil and a bit of salt.
  3. Place the potatoes into the air fryer basket and cook at 400°F for 35 to 40 minutes until they can be easily pierced with a fork.
  4. Take the potatoes out of the basket and let them cool slightly.
  5. Once they are cool, slice each potato in half and scoop out most of the insides into a large mixing bowl, keeping the skins intact.
  6. Add the plain yogurt, softened beef, milk, sliced green onions, salt, pepper, and ¾ cup of the grated cheddar cheese to the bowl. Mash everything together until the mixture is smooth and creamy.
  7. Fill the potato skins with the mashed mixture and sprinkle the remaining cheddar cheese on top.
  8. Return the stuffed potatoes to the air fryer basket and cook at 350°F for another 2 minutes.
  9. Finish by sprinkling chopped beef and chives over the top.
