Ingredients
- 25 pounds ground beef (567 g)
- 1/4 teaspoon poultry seasoning (1.25 ml)
- 1/2 teaspoon garlic salt (2.5 ml)
- 1 teaspoon onion powder (5 g)
- 1 teaspoon salt (5 g)
- 1/2 teaspoon ground black pepper (2.5 ml)
- 1/4 teaspoon Worcestershire sauce (1.25 ml)
- 1 pinch cayenne pepper
- 1 large egg, beaten
- 1/4 cup milk (60 ml)
- 1/2 cup plain bread crumbs (60 g)
- 1 tablespoon (15 ml) vegetable oil
- 1 cup (240 ml) canned cranberry sauce
- 1/2 cup orange marmalade (120 ml)
- 1/2 cup chicken broth (120 ml)
- 1 tablespoon (15 ml) minced jalapeno pepper
- 1 tablespoon (15 ml) minced Fresno pepper
- 1 pinch salt and ground black pepper to taste
Instructions
- Combine the beef, poultry seasoning, garlic salt, onion powder, salt, black pepper, Worcestershire sauce, and cayenne in a mixing bowl. Incorporate the beaten egg, milk, and bread crumbs into the mixture. Cover it with plastic wrap and chill in the refrigerator for an hour.
- Warm vegetable oil in a pan over medium heat. Shape the beef mixture into balls, using about a tablespoon for each. Arrange the meatballs in a single layer in the pan. Cook the meatballs until browned on all sides, turning them occasionally. Transfer the browned meatballs to a clean baking sheet and set them aside.
- Mix the cranberry sauce, orange marmalade, and chicken broth together over medium heat in the same pan. Add the minced jalapeno and Fresno peppers, then return the meatballs to the pan. Lower the heat to medium-low and continue cooking until the meatballs are fully cooked and the glaze has thickened. Adjust seasoning with salt and pepper as needed.
Notes
- Consider using lean ground beef or turkey for a healthier alternative.
- Add hot sauce or fresh herbs to the meatball mixture for unique flavors.
- Adjust the glaze’s sweetness or spice level to suit your taste preference before serving.
