Ingredients

  • – 1 lb (454 g) boneless skinless chicken thigh
  • – 1/2 teaspoon (3 ml) sea salt
  • – black pepper, to taste
  • – 4 tablespoons (60 ml) soy sauce
  • – 4 tablespoons (60 ml) beef broth
  • – 2 tablespoons (30 ml) rice vinegar
  • – 2 1/2 tablespoons (38 ml) honey
  • – 1 clove garlic, smashed
  • – toasted sesame seeds
  • – lemon wedge


Instructions

  1. Position the chicken thigh with the underside facing up and make several incisions on the thicker sections to facilitate quicker cooking and reduce shrinkage.
  2. Season both sides with sea salt and black pepper, then let it rest for 10 minutes. This step can be done a few hours or a day ahead and stored in the refrigerator until needed.
  3. Combine all the ingredients for the teriyaki sauce in a small saucepan, bring it to a boil, and continue boiling at a medium level for about 3 minutes or until it thickens and you notice numerous small bubbles forming on top. Reserve half of the sauce for serving and use the remainder to coat the chicken.
  4. Position the chicken thigh with the underside facing up on the air fryer tray. Apply the teriyaki sauce generously over the surface and cook at 350°F (180°C) for 8 minutes.
  5. Turn the chicken over, apply more sauce, and increase the cooking temperature to 400°F (200°C). Continue cooking for an additional 6 minutes or until fully done, applying more sauce halfway through.
  6. Scatter toasted sesame seeds over the teriyaki chicken, slice it into strips, drizzle with extra sauce, and serve alongside warm rice. Optionally, add a squeeze of lemon juice over the teriyaki chicken for enhanced flavor.
