Ingredients
- – 3 cups (720 ml) sweet potatoes, cubed and cooked
- – 1/2 cup (120 ml) coconut milk (full-fat, canned)
- – 1/4 cup (60 g) brown sugar
- – 1 tsp (5 ml) ground cinnamon
- – 1 cup (120 g) pecan pieces
- – 1/2 cup (60 g) cassava flour (or all-purpose flour)
- – 1/4 cup (60 g) brown sugar
- – 1 tsp (5 ml) ground cinnamon
- – 1/4 cup (60 ml) vegetable oil (or dairy-free butter), melted
Instructions
- In a large pot, heat water until it reaches a rolling boil. Cook the sweet potato cubes until they become tender, approximately 10 minutes.
- Once cooked, drain the water and transfer the sweet potatoes to a bowl. Use a potato masher or fork to mash them thoroughly.
- Stir in the brown sugar. Measure ½ cup of the coconut milk from the can, using the creamy portion first.
- Sprinkle in the cinnamon and mix everything together with a fork until well combined.
- Evenly distribute the mixture into a greased 8×8 baking dish and set it aside for later.
- In a separate large bowl, combine the flour, brown sugar, and cinnamon.
- Add the melted butter and mix until the texture becomes crumbly.
- Scatter the pecan pieces over the top of the sweet potato mixture.
- Cook this casserole in the air fryer at 340°F (171°C) for 16 minutes. Serve and savor!
