Ingredients

  • – 3 cups (720 ml) sweet potatoes, cubed and cooked
  • – 1/2 cup (120 ml) coconut milk (full-fat, canned)
  • – 1/4 cup (60 g) brown sugar
  • – 1 tsp (5 ml) ground cinnamon
  • – 1 cup (120 g) pecan pieces
  • – 1/2 cup (60 g) cassava flour (or all-purpose flour)
  • – 1/4 cup (60 g) brown sugar
  • – 1 tsp (5 ml) ground cinnamon
  • – 1/4 cup (60 ml) vegetable oil (or dairy-free butter), melted


Instructions

  1. In a large pot, heat water until it reaches a rolling boil. Cook the sweet potato cubes until they become tender, approximately 10 minutes.
  2. Once cooked, drain the water and transfer the sweet potatoes to a bowl. Use a potato masher or fork to mash them thoroughly.
  3. Stir in the brown sugar. Measure ½ cup of the coconut milk from the can, using the creamy portion first.
  4. Sprinkle in the cinnamon and mix everything together with a fork until well combined.
  5. Evenly distribute the mixture into a greased 8×8 baking dish and set it aside for later.
  6. In a separate large bowl, combine the flour, brown sugar, and cinnamon.
  7. Add the melted butter and mix until the texture becomes crumbly.
  8. Scatter the pecan pieces over the top of the sweet potato mixture.
  9. Cook this casserole in the air fryer at 340°F (171°C) for 16 minutes. Serve and savor!
