Ingredients
- 12 oz Brussels Sprouts, stemmed and halved (340g)
- 1 Tablespoon (16g) Olive Oil
- 1 teaspoon (5 ml) Kosher Salt
- 1 teaspoon (5 ml) Black Pepper
- 1 lb Boneless Skinless Chicken Breast, diced (454g)
- 1 Tablespoon (16g) Vegetable Oil
- 2 teaspoon (10 ml) Ground Ginger
- 1 teaspoon (5 ml) Garlic Powder
- 1 teaspoon (5 ml) Chili Powder
- 1/2 teaspoon (3 ml) Kosher Salt
- 1/4 cup (60g) Sweet Chili Sauce, plus more for serving
Instructions
- Trim the ends from the Brussels sprouts, slice them in half, and mix them with the olive oil, salt, and pepper.
- Place the Brussels sprouts into the air fryer basket and set the temperature to 400ºF, cooking them for 10 minutes.
- In the meantime, coat the diced chicken breast with vegetable oil, then blend in the ground ginger, garlic powder, chili powder, and additional salt, ensuring the chicken is well-covered.
- Once the Brussels sprouts have cooked for 10 minutes, introduce the chicken breast into the basket and gently combine everything.
- Continue air frying at 400ºF for another 10-12 minutes until the chicken reaches an internal heat of 160ºF to 165ºF, stirring halfway to ensure the Brussels sprouts are crisped evenly.
- Mix in a quarter cup of sweet chili sauce and thoroughly blend. Air fry or broil for an extra 1-2 minutes to allow the sauce to caramelize. Serve with rice, toasted sesame seeds, lime wedges, and extra sweet chili sauce if you like.
